Produced from the most mature vines in the Piccadilly Valley. It is here that Pinot Noir flourishes, producing grapes with diverse and fascinating flavours. This wine has great elegance, vibrancy and structure produced by deft, hands-off winemaking. Simply stunning!

Vinification: This wine is made with extraordinary care. Each clone is hand picked and then fermented separately using traditional winemaking methods, such as the inclusion of a high proportion of whole bunches rather than de-stemming; this requires traditional foot stomping of a percentage of the vat to encourage fermentation. Older French oak barrels are selected to mature the wine for a period of 9 months to retain the vibrant fruit charters of the vineyard. Only the best barrels were selected for this limited production wine before the wine was gently handled by gravity and without fining or filtration before hand bottling and wax sealing.
